COCONUT CREAMY - DREAMY DESSERT

When I was catering this was my best selling dessert. It is so creamy and refreshing and it is perfect in hot or cold weather. It is very easy and inexpensive to make and can keep in the refrigerator for up to 5 days. I make it for holiday gatherings with family and summer barbeques with friends and it is always one of the first pans to be emptied. 

Note – In hot weather when I serve this dessert outside I make it in a tin pan. I take a second pan of the same size and put two inches of water in the bottom and freeze it. Before serving I set the dessert pan down on top of the ice pan. The ice makes the tin pans very cold and keeps the dessert perfectly chilled.

The coconut will release a small amount of oil as it is heated so you do not need to add any oil or non-stick spray to your skillet.

Continuously toss the coconut with a spoon as it heats until browned. Note – coconut will brown and burn very quickly. Once it is the desired brown color remove to plate to cool as fast as possible.
