CHRISTMAS LAMB CHILI WITH
STICKY SWEET CORNBREAD

This Sticky Sweet Cornbread is so moist and gooey and tastes great served so many different ways. We like how it adds a little sweetness to chili. We eat it crumbled in a bowl with taco meat, cheese and sour cream on top. We like it in a bowl with maple syrup poured over top. And we like it warm with a hunk of butter spread across the top. 

Just a side note – I gave directions above how to substitute if you don’t have real buttermilk. Do not omit adding the white vinegar to your milk if you don’t use real buttermilk. The tang of the vinegar is very necessary to this recipe and will alter the taste of the finished bread, and not in a good way, if it is omitted.

I always make this version of chili during the holidays. The ground lamb gives it a great flavor and it has become a yearly tradition that I make it sometime over the holiday season. The sticky sweet cornbread really makes it taste great, giving it just a little sweetness that really compliments the lamb well. The sour cream and cheese just finish it off perfectly.
